Always was looking for the right combination of herbs and spices to create unique flavourful and all natural seasonings for my smoked meats.. That challenge has inspired to experiment with a wide variety of combinations looking for the best rubs and marinades for our brisket, pastrami, bacon, ribs and my personal favourite our Jerky!
Smoking adds flavor, improves the appearance of meat through the Maillard reaction, and when combined with curing it preserves the meat. When meat is cured then cold-smoked, the smoke adds phenols and other chemicals that have an antimicrobial effect on the meat.

While primarily smoking beef and pork, we are currently working to include poultry and seafood in our selection. Keep checking back for announcements and updates!
Humans have enjoyed versions of beef jerky for thousands of years. Early variations of dried meat can be traced back to the ancient Egyptians, but the closest version to modern day beef jerky started with the indigenous societies of the Andes mountains in modern day Peru.
At Papu's we've looked to take that ancient tradition and kick it up a notch with sultry smoked flavours and a wonderful assortment of seasonings.
